Slow Cooker Swiss Steak


This was VERY yummy. It gave me a different way to prepare swiss steak to change it up a bit!

It was GREAT served with mashed potatoes!

Ingredients

1/4 cup all-purpose flour
salt and pepper to taste
1 1/2 pounds round steak, cut into small pieces
2 tablespoons vegetable oil
3 stalks celery, chopped
1 onion, chopped
1 cup baby carrots
2 (14.5 ounce) cans diced tomatoes with juice
2 tablespoon Worcestershire sauce
4 tablespoons brown sugar, or to taste

Directions

1.In a shallow bowl, mix the flour, salt, and pepper. Lightly coat the round steak pieces in the flour mixture.
2.Heat the oil in a skillet over medium heat, brown round steak pieces until lightly browned.
3.Place the vegetables and steak in a slow cooker. Mix in the tomatoes with juice, Worcestershire sauce, and brown sugar.
4.Cover, and cook 8 to 10 hours on Low, until the round steak is very tender.

Lollipop Snacks

1 bag (16 oz) large marshmallows
1/4 c butter or margarine
1 box (15.6 oz) Rice Chex
about 24 wooden sticks with rounded ends



Butter a 15 x 10 x 1 in. pan.


In large microwaveable bowl, microwave marshallows and butter on High 2 to 3 minutes, stirring every minute, until mixture is smooth. Stir in cereal. Using buttered back of spoon or hands, press firmly in pan.



Cool 2 to 3 hrs before cutting into shapes. Cut into shapes with 2 1/2 to 3 inch cookie cutters that have lightly been sprayed with cooking spray. Insert wooden sticks about 1 inch into bottom of shape.



Decorate as desired.

Taco Lasagna


Ingredients:


2 pounds lean ground beef2 (1.25 ounce) packages taco seasoning mix
4 cloves garlic, minced
1/2 teaspoon cayenne pepper
1 tablespoon chili powder
1/2 cup water
18 (6 inch) corn tortillas
1 (24 ounce) jar salsa
1 cup sliced green onion
1 (16 ounce) container sour cream
1 1/2 cups shredded Cheddar cheese
1 1/2 cups shredded Monterey Jack cheese

Directions:


1. Place ground beef in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, then season with taco seasoning, garlic, cayenne pepper, chili powder and water. Simmer for 10 minutes.
2. Preheat oven to 375 degrees F (190 degrees C). Grease the bottom of a 9x13 inch baking dish.
3. Place 6 tortillas into the prepared baking dish. Spread 1/3 of the salsa on top of the tortillas. Spread 1/2 of the meat mixture evenly over the salsa. Sprinkle with 1/2 of the green onions. Drop 1/2 of the sour cream randomly over the green onions. Top with 1/2 cup Cheddar and 1/2 cup Monterey Jack cheese. Repeat layers. Top with 6 tortillas, spread with remaining salsa, and sprinkle with remaining cheese.
4. Bake in a preheated oven for 30 to 45 minutes or until cheeses are melted.

New Years Resolutions

So this year, Chris and I have decided to go on a diet as our new years resolution! I know...we'll see how long this lasts! Dieting is so very hard to stick with. However, we are giving ourselves "cheat" days in hopes that will help us stick to our "diet" days.

Today is the first day. I'm doing pretty good. I'm drinking my water. Ugh...I hate drinking so much water. It makes me have to go the bathroom so much more! BUT, I know my body needs it... AND, it helps in keeping me feeling full! BONUS!

So, my menus might not be the most exciting...but, I'm hoping to try out some new and healthy recipes. However, we still have three girls that are gonna want "normal" meals like pizza, spaghetti and corn dogs....we'll just have to make sure we have healthy options to go along with them and of course, we definitely feel a lot has to do with portion size!

Root for us! Pray for us! Hopefully we can stick to it and maybe become healthier and thinner in the end!!!
