Cute Pig Cookies


1 c. butter
1 1/2 c. sugar
2 eggs
1 c. (8 0z) sour cream
1 tsp. vanilla extract
3 c. all purpose flour
1 tsp. baking powder
1/2 tsp. salt

FROSTING:
4 c. powdered sugar
1/2 c. butter, melted
6 Tbsp. milk
2 tsp. vanilla extract
5-6 drops red food coloring

pink sugar wafer cookies
36 large marshmallows, halved
Butterscotch chips
miniature semisweet chocolate chips

In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs, sour cream and vanilla. Combine dry ingredients, gradually add to creamed mixture and mix well.

Drop by tablespoonfuls onto ungreased baking sheets. Bake at 375 degrees for 10-12 minutes or until edges are lightly browned. Remove from pans to wire racks to cool completely.

For frosting, in a large bowl, combine the powdered sugar, butter, milk, vanilla and food coloring. Frost cookies

Cut sugar wafers into triangles, place two on each cookie for ears. With a toothpick, poke two holes in each marshmallow half for nostrils and place butterscotch chips into holes. Place nose on cookies. Add chocolate chips for eyes.

Rainbow Cake

Eating the rainbow is a ton of FUN!

Here's how you can do it...


RAINBOW CAKE

2 white cake mixes
Wilton Icing Colors in red, orange, yellow, green, blue, and purple (the drop food coloring WILL NOT work - it won't make your cakes bright enough)
FROSTING:
2 sticks butter, softened
powdered sugar
vanilla extract
milk
whipped topping

Make the cake mixes as directed on box. Divide cake mix into 6 seperate bowls and put a tsp of color into each bowl making up your six primary colors of the rainbow. Bake each cake seperately in 9 in round cake pans that are heavily greased with cooking spray. Let each cake cool completely before beginning to stack your cakes.

Meanwhile, cream two sticks of butter. Add a tsp of vanilla and about 1/2 - 3/4 of the bag of powdered sugar. Mix together until it's thick. Add about 1-2 Tbsp of milk to get frosting to the right consistency. (start with 1 Tbsp at a time - you don't want your frosting too thin). Then add 1/2 of a container of whipped topping to the frosting. This was AWESOME! It had the perfect amount of sweetness, but was light and fluffly like whipped topping is. GREAT IDEA!

When your cakes are completely cooled, stack them starting with purple (on the bottom) and frost a thin layer of frosting between each layer of cake. Once all layers are on, frost entire cake - top and sides (which by the way is NOT easy - you have to be patient)!

WALLA! You're done to enjoy your beautiful cake!


PS. This cake was SOOOOO moist! We loved it! It honestly tasted as good as it looked! And the frosting was perfect too! DELICIOUS!

Halloween Cupcakes

These were so much fun to make. PS. the web is edible...the spiders were just cutesy decoration!

INGREDIENTS:

1 box German Chocolate cake mix, prepared as directed on box
1 tub Dark Chocolate Fudge frosting
2 cups white chocolate chips

DIRECTIONS:

  1. To Make the Cupcakes: Place 24 paper liners in muffin pans, then fill each liner two-thirds full with prepared German Chocolate Cake mix . Bake at 350°F for 15 to 20 minutes, then set aside until cool.
  2. Transfer a container of Dark Chocolate Fudge frosting into a bowl, microwave for 10 seconds, and stir; repeat until thin enough to pour. Dip cupcake upside down into frosting, submerging the top but not touching liner to frosting. Let excess drip off before turning upright. Continue until all cupcakes are glazed.
  3. To Make the Web Topper: Microwave white-chocolate chips in a bowl for 30 seconds and stir. Continue to microwave in 20-second intervals until almost melted. Stir again until chocolate is completely melted. Pour inside a freezer bag with one tip snipped off to create a piping sleeve. (I used a decorators bag with a #3 tip)
  4. Line a cookie sheet with parchment paper. Slide spiderweb template underneath paper. To make each web, use piping sleeve to trace white chocolate along design, making sure to connect all lines. Repeat process until you've created 24 toppers. Chill them in refrigerator for 10 minutes. Then, using a spatula, remove webs carefully from parchment and position one on each cupcake.

Planning Meals

I know you know that I plan my meals out... I mean, I do post them weekly. That is part of my plan in helping me get and stay organized!!! It helps to make sure we don't eat out too often AND it helps with not having to make hamburger helper every night since I didn't think ahead and lay something out for dinner.

Here's how I do it...
...maybe it will help you to get organized too!

First... I have made a list of all my families favorite meals. Yes, I mean an actually list (on the computer anyways)! This helps me to remember different things that we have eaten and really liked before... to keep us from not eating spaghetti every week!

Second...sometime during the week (usually in the evening after kids are in bed) I sit down and write out a supper item for each evening. It is important that you grab your calendar when you are doing this... It helps to see what events are planned that week and whether or not you will need to grab something fast and on the go, plan something that is quicker to fix so you can head out to your event after supper, or know if you will have time to prepare a more time consuming meal!

One thing I have been doing is trying a new recipe at least once per week. This is fun as we are getting to try new things...but it also increases our family favorite list when we add the ones that we really like. I get most of my new recipes from friends and family, from work and church cookbooks and from the all recipes website. I LOVE this website. I get a daily recipe emailed to me and I have my online recipe box that I add anything that is emailed that sounds good and looks easy to make. You can create yours too! Check it out at www.allrecipes.com.

Also, I usually leave Thursdays for leftover night! After preparing three meals in a row, we usually have enough leftovers in the fridge from those meals to feed our entire family. This is just good sense... it allows us not to waste food and gets those leftovers eaten BEFORE they get moldy! Sometimes it doesn't work out and we don't have the leftovers I thought we would. On those occasions...I usually fix frozen pizzas or grilled cheese sandwiches. Something easy that I know I have on hand!

Another thing I do is usually give us one day that week to eat out (either as a family or Chris and I alone)! I LOVE to eat out at restaurants and I cannot omit that from my lifestyle just because I want to make more meals at home! If I plan it...it helps me to stick to the plan and doesn't let "eating out" get out of control!

Third... Once my meals are planned out for the week I sit down and make out my grocery list. I determine the ingredients I will need for each of my meals and write them down. Then I head to my pantry and cupboards to see what I already have and what I will need to buy. This is extremely important to meal planning. I HATE going to the grocery store. And, if I HAVE to do it. then I am only going ONCE! So, I want to make sure that I have everything I will need to make my meals... because nothing is more frustrating than to NOT have an ingredient that I am needing (which I usually notice at the specific time I am cooking that meal).

Fourth... Once my grocery list is in place...I usually add items that are on sale and are at the cheapest price to stock my panty (I will go into this process in a later post). Then, I head to the store for my one stop for the week and purchase everything I will need to make my meals!

EASY you say? It is when you are organized.

Do I stick to my schedule every week? Not always...you have to adjust and be flexible as sometimes things arise to change your plans.

But does meal planning help? ABSOLUTELY! It helps keep you sane... and healthy... and financially in check... and most importantly... happy because you are spending LESS time worrying and preparing supper and MORE time doing fun things with your family!

Getting behind...Menu: Oct 5-11

I am so sorry that I have gotten behind....not really on my menus...but posting them - YES!

I have had lots of you telling me that you didn't know what you were having for supper since I hadn't posted anything. Wow, that is sweet! I am flattered that this helps you with your menu planning.

I have to say...I did something yesterday I've never done before! I forgot to buy a jar of spaghetti sauce this week for yesterdays dinner and didn't realize it until I was cooking everything up and ready to add it to my chicken. UUGGGHH!! So, I had to scrounge around and make it up! I have never been one that can make stuff without recipes or throw together spices and food to make something good. Well, I had to improvise last night and make my own spaghetti sauce. I ended up using some tomato paste, tomato sauce, some parsley and italian seasoning to create what pretty much tasted like spaghetti sauce. It wasn't quite as good as some of the more flavorable ones in the jar, but it wasn't bad AND it worked for my family! I was so proud of myself.

Menu: Sept 21-27

Well, it's time for another menu this week. I'm kinda putting together another easy one since we will be gone again this weekend. But, I am hoping to try something new too! I hope you enjoy my menu ideas... my goal is to provide a variety of meals for my family and add new favorites to the choices in the process. I like making new things; however, I do have some stipulations...

1. the recipe MUST not contain any ingredients I have NEVER heard of or have NO IDEA what they are. I hate buying something that I know I may never use again!
2. it kinda needs to be a "normal" type meal. I don't really fix "fancy"! I HAVE THREE KIDS AND A HUSBAND WHO IS PICKY!!!
3. I watch reviews and pictures...if other's aren't giving it a thumbs up and if it doesn't look appetizing...what's the point!
4. I also try and watch prep and cook times. I don't have a ton of time prepping a meal and waiting on it to cook...I HAVE THREE KIDS!!!

I guess that is mainly it. I get most of my "new" recipes from the church or previous work cookbooks, from friends and relatives AND from one of my favorite websites... www.allrecipes.com. I love it AND you can request a daily recipe emailed to you. Then I can keep it or delete it. EASY! You should try it out.

Anyways... back to the menu for this week...

Tacos in a Pasta Shell

Sounds wierd huh? I thought so...I was really nervous about this one. I just couldn't quite see myself eating mexican with pasta...it just doesn't go!

However, I was pleasantly surprised! This turned out to be really good...and relatively easy to make, which was another one of my hesitations. Chris and I couldn't get over how tasty the meat was! Yum. Another one to add to our regular supper menu items!

Here is the recipe...

Taco Pasta Shells

1 1/4 pounds lean ground beef
1 (3 ounce) package cream cheese
1 teaspoon salt
1 teaspoon chili powder
18 jumbo pasta shells
2 tablespoons butter, melted
1 cup taco sauce
1 cup shredded Cheddar cheese
1 cup shredded Monterey Jack cheese
1 1/2 cups crushed tortilla chips
1 cup sour cream

In a large skillet, brown beef over medium heat until no longer pink; drain. Add cream cheese, salt and chili powder; mix and simmer for 5 minutes.
Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Toss cooked shells in butter.
Preheat oven to 350 degrees F. Fill shells with beef mixture and arrange in a 9x13 inch baking dish; pour taco sauce over shells. Cover with foil and bake in preheated oven for 15 minutes. Remove dish from oven and top with Cheddar cheese, Monterey Jack cheese and tortilla chips; return dish to oven to cook for 15 minutes more.
Top with sour cream and black olives; serve.

Baked Ziti

Wonderful!!! This is sooooo good!!!

1 lb. hamburger
1 small onion, chopped
2 jars spagetti sauce
6 oz of sliced provolone
1 cup sourcream
1 lb. ziti
1 cup mozzarella cheese (shredded)

Pre-heat oven to 350. Brown hamburger and onion in skillet. While hamburger is browning, cook ziti per package instructions. Drain hamburger then add sauce to hamburger, simmer until sauce is well heated. When ziti is done, drain. Layer in 9 x 13 pan in this order: 1/2 of ziti, provolone cheese, sour cream, half of hamburger/sauce mixture. Then the rest of the ziti, the rest of the hamburger/sauce mixture. Top with mozzarella cheese. (we usually use more than it calls for because we like it very cheesy. Bake for 30-40 minutes, just until cheese is started to brown.

Wow, so last week went down the toilet as to trying to stick to my menu...I mean, I didn't even get one planned out and posted. So, today...I'm aiming to get back on track!

The good news...I DID get the Baked Ziti made and it was AWESOME! Thanks Kathy for giving us a new family favorite menu item! The kids and Chris thought it was the best...and it really fed us for two evenings. There was NONE leftover in the end...after the kids asked for seconds and thirds...it for sure got eaten! I will post the recipe in a couple days...I PROMISE! You will FOR SURE want to try it out on your family!

Menu: Aug 17-23

So, last week I was really proud of myself for sticking to my menus that I even bragged a little about it....

well I maybe spoke to soon!

This week didn't go as well...bummer! So, I didn't have a new recipe to post this week because it didn't happen...it didn't get fixed...because I didn't stick to my menu quite as good.

It wasn't all my fault (I'd like to say)... I was gone on Tuesday night and Chris ordered pizza instead of making an oh so easy menu item for the night...Corn Dogs! And then Wednesday I had an exhausting day and really didn't want to fix a new recipe that night...so we had corn dogs instead...I mean, why not...I had bought them right? And Thursday, we didn't have any leftovers because I hadn't stuck to the menu...so it was a box of Hamburger Helper for us...NOT MY FAVORITE THING IN THIS WORLD! We did go out to eat Friday with some friends of ours and then on Saturday we cooked out with the same friends...that was some GOOD Pork Loin on the bbq...yum...THANK YOU TIM!!! So, for today, we have pot roast - not happening since our plans have changed and we are now hanging at the pool today with Chris' family...but, that's okay with me...I'd rather be at the pool!

So, like I said...we didn't do so well this week, but I have learned that we MUST be flexible!

I hope this week is more back to schedule...probably will be since it's "back to school" week...but you never know.

nonetheless...here is this week's menu...and Baked Ziti is back on the menu, so hopefully we'll get to try it and I'll let you know how it tastes...along with the recipe!

Menu: Aug 10-16

I have to brag a little...I have been doing SO GOOD sticking to my menus and cooking more and more at home. I have been organized and that helps with preparing my grocery list to insure I have all my ingredients during the week. Having menus planned out helps me to prepare about what I'm fixing that day instead of what used to happen...me thinking about it around 3 or 4 in the afternoon and then deciding to go out to eat or have pizza delivered since I didn't have any meat unthawed... I'm sure some of you can relate!

I knew I was doing better when Chris tells me tonight "this is one of my top 5 favorite meals" and then compliments me about cooking at home and 'being prepared'. YEAH!!! And, we are doing much better about sitting around the dining room table INSTEAD of fixing the plates and Chris and I sitting at the table while the girls sit at the counter and watch TV while they eat...yes, I know that is BAD! But, we have broken that habit and we are enjoying our meals more as a family...from bad to GOOD - right!

So I hope I'm inspiring you to change some of your habits at mealtime. But for now, here is this weeks menu...

Alfredo Mostaccioli

Wow, I am late getting this posted this week...but, I did just start my daycare, so my days have been a little more busy than usual. So, I know you all will give me a break this time.

This recipe was VERY, VERY good. I am not usually one to "make" my own Alfredo sauce...I usually just buy a jar of Ragu's premade Alfredo sauce, which is really not that bad tasting. However, I wanted to try it and I was very impressed. No more RAGU for me!

This sauce tasted so good - Chris LOVED it and asked that I use it from now on. For this particular recipe, I did make a few changes...or really additions. First, I would love to know where you can actually buy mostaccioli! I couldn't find it ANYWHERE...so I improvised with fettechini, which always works with Alfredo sauce. And, I added cooked, cubed chicken to the recipe as well...to give it an all around balanced meal! Lastly, I only added 1/4 c. parsley because it looked like a lot and if I would have added more, I think the Alfredo sauce would have turned green. So, here is the recipe as it was originally written....

Alfredo Mostaccioli

1 - 16 oz pkg. mostaccioli
1 c. heavy whipping cream
1/2 c. butter
1/2 c. grated Parmesan cheese
1 c. chopped parsley
1 tsp. salt
1/4 tsp. black pepper
1/8 tsp. garlic powder

Bring a large pot of lightly salted water to boil. Add pasta and cook until tender, approximately 8-10 min; drain. Combine heavy cream and butter in a dutch oven or large saucepan over medium heat. Heat until butter melts, stirring occasionally; do not let mixture boil! Stir in Parmesan cheese, parsley, salt, pepper, and garlic powder. Toss with cooked pasta and serve immediately.

Oh, one last thing... the sauce seems to be kinda runny at first... so my suggestion would be to let it sit for at least 5 min as it thickens as it sits. It was at the right consistency for us about halfway through the meal...but we didn't let it sit at all!

I have to admit...this weeks menu was a little more complicated than the one's before. With the daycare staring and having a menu for lunches, I now have to pick items for supper that isn't the same as the daycare menu. Who wants to eat the same this twice in one week! Boring!

Sour Cream Enchilladas

Okay, I know I am late getting this recipe up! Sorry. I have had lots of request for it, which makes me smile knowing that my new blog is being read! Yay!

This is a very good dish! It has been added to our regular supper menu choices!

Sour Cream Enchilladas

6-8 tortillas
3/4 c. onion, chopped
2 c. Monterey Jack cheese, shredded
4 oz. can green chilies
2 Tbsp. butter
1/4 c. flour
2 c. chicken broth
1 c. sour cream

Put 2 Tbsp. cheese and 1 Tbsp. onion on tortilla and roll up. Place seam side down in baking dish. Melt butter; blend in flour till thickened; add broth, sour cream, chilies, and remaining onions and cheese. Pour over enchillada. Bake 20 minutes at 425 degrees.

One of my favorites...Pork Cantonese

This is one of my family's favorite meals...

Pork Cantonese

1 1/2 lb boneless pork, cut into strips
1 Tbsp. oil
1 onion, sliced
1 small green pepper, cut into strips
4 oz can sliced mushrooms, drained
8 oz can tomato sauce
1 1/2 Tbsp. vinegar
3 Tbsp. brown sugar
2 tsp Worcestershire sauce
1 1/2 tsp. salt

Brown pork strips in oil in skillet. Drain well. Place pork and all other ingredients in slow cooker. Cover and cook on low for 6-8 hours (High for 3 hours). Serve over rice.

I usually double this recipe...last night I even quadrupled it so I could feed some friends of ours! IT IS SO GOOOD!!!! Hope you like it!

A First: Meatloaf!

In all the years that Chris and I have been married, I have never fixed meatloaf for any meal that we have eaten at home. In fact, I can't say it is all because Chris hates it....I really didn't care for it either. But, in my quest of trying a new recipe each week - I did the unthinkable today...I made MEATLOAF!! Applesauce Meatloaf to be exact. And...it actually tasted very good! Chris even said it could be made again. So, here is the recipe...I dare you to try it. If we can like it, I bet you will too!



Applesauce Meatloaf


1 lb ground beef
1/2 c bread crumbs
1 tsp salt
3/4 c applesauce
1/4 c brown sugar
1/2 c chopped onion
1/4 tsp seasoned salt
2 eggs, beaten
1/4 c ketchup
1/8 c mustard


Mix ground beef, onion, bread crumbs, seasoned salt, salt, eggs, and applesauce together. Spoon into an ungreased 9x5 loaf pan; set aside. Combine ketchup, mustard & brown sugar and spread over meatloaf. Bake at 350 for 1 hour.

Tips: Preparing Beverages

  • to add flavor to tea, dissolve old fashioned lemon drops or hard mint candies in tea
  • always chill juices or sodas before adding them to beverage recipe
  • calorie-free club soda adds sparkle to iced fruit juies and reduces calorie per portion
  • to cool your punc, float an ice ring made from the punch rather than using ice cubes...it's more decorative and it doesn't dilute the punch
  • place fresh or dried mint in the bottom of a cup of hot chocolate for a cool and refreshing taste
  • never boil coffee, it brings out acids that cause a bitter taste
  • always use cold water for electric drip coffee makers

Chicken Casserole

This is the new recipe for this week. I'll let you know how it goes!

Chicken Casserole

4 chicken breasts
4 slices swiss cheese
1 can cream of chicken soup
1/3 c. water
3/4 c. bread crumbs
1/3 c. melted butter

Rinse chicken and pat dry. Put in baking dish. Cover each chicken with swiss cheese. Mix soup and water together and cover chicken. Sprinkle with bread crumbs. Drizzle with melted butter. Bake at 350 for 1 hour.
