Menu: Aug 31-Sept 6

Wow, so last week went down the toilet as to trying to stick to my menu...I mean, I didn't even get one planned out and posted. So, today...I'm aiming to get back on track!

The good news...I DID get the Baked Ziti made and it was AWESOME! Thanks Kathy for giving us a new family favorite menu item! The kids and Chris thought it was the best...and it really fed us for two evenings. There was NONE leftover in the end...after the kids asked for seconds and thirds...it for sure got eaten! I will post the recipe in a couple days...I PROMISE! You will FOR SURE want to try it out on your family!

Menu: Aug 17-23

So, last week I was really proud of myself for sticking to my menus that I even bragged a little about it....

well I maybe spoke to soon!

This week didn't go as well...bummer! So, I didn't have a new recipe to post this week because it didn't happen...it didn't get fixed...because I didn't stick to my menu quite as good.

It wasn't all my fault (I'd like to say)... I was gone on Tuesday night and Chris ordered pizza instead of making an oh so easy menu item for the night...Corn Dogs! And then Wednesday I had an exhausting day and really didn't want to fix a new recipe that night...so we had corn dogs instead...I mean, why not...I had bought them right? And Thursday, we didn't have any leftovers because I hadn't stuck to the menu...so it was a box of Hamburger Helper for us...NOT MY FAVORITE THING IN THIS WORLD! We did go out to eat Friday with some friends of ours and then on Saturday we cooked out with the same friends...that was some GOOD Pork Loin on the bbq...yum...THANK YOU TIM!!! So, for today, we have pot roast - not happening since our plans have changed and we are now hanging at the pool today with Chris' family...but, that's okay with me...I'd rather be at the pool!

So, like I said...we didn't do so well this week, but I have learned that we MUST be flexible!

I hope this week is more back to schedule...probably will be since it's "back to school" week...but you never know.

nonetheless...here is this week's menu...and Baked Ziti is back on the menu, so hopefully we'll get to try it and I'll let you know how it tastes...along with the recipe!

Menu: Aug 10-16

I have to brag a little...I have been doing SO GOOD sticking to my menus and cooking more and more at home. I have been organized and that helps with preparing my grocery list to insure I have all my ingredients during the week. Having menus planned out helps me to prepare about what I'm fixing that day instead of what used to happen...me thinking about it around 3 or 4 in the afternoon and then deciding to go out to eat or have pizza delivered since I didn't have any meat unthawed... I'm sure some of you can relate!

I knew I was doing better when Chris tells me tonight "this is one of my top 5 favorite meals" and then compliments me about cooking at home and 'being prepared'. YEAH!!! And, we are doing much better about sitting around the dining room table INSTEAD of fixing the plates and Chris and I sitting at the table while the girls sit at the counter and watch TV while they eat...yes, I know that is BAD! But, we have broken that habit and we are enjoying our meals more as a family...from bad to GOOD - right!

So I hope I'm inspiring you to change some of your habits at mealtime. But for now, here is this weeks menu...

Alfredo Mostaccioli

Wow, I am late getting this posted this week...but, I did just start my daycare, so my days have been a little more busy than usual. So, I know you all will give me a break this time.

This recipe was VERY, VERY good. I am not usually one to "make" my own Alfredo sauce...I usually just buy a jar of Ragu's premade Alfredo sauce, which is really not that bad tasting. However, I wanted to try it and I was very impressed. No more RAGU for me!

This sauce tasted so good - Chris LOVED it and asked that I use it from now on. For this particular recipe, I did make a few changes...or really additions. First, I would love to know where you can actually buy mostaccioli! I couldn't find it ANYWHERE...so I improvised with fettechini, which always works with Alfredo sauce. And, I added cooked, cubed chicken to the recipe as well...to give it an all around balanced meal! Lastly, I only added 1/4 c. parsley because it looked like a lot and if I would have added more, I think the Alfredo sauce would have turned green. So, here is the recipe as it was originally written....

Alfredo Mostaccioli

1 - 16 oz pkg. mostaccioli
1 c. heavy whipping cream
1/2 c. butter
1/2 c. grated Parmesan cheese
1 c. chopped parsley
1 tsp. salt
1/4 tsp. black pepper
1/8 tsp. garlic powder

Bring a large pot of lightly salted water to boil. Add pasta and cook until tender, approximately 8-10 min; drain. Combine heavy cream and butter in a dutch oven or large saucepan over medium heat. Heat until butter melts, stirring occasionally; do not let mixture boil! Stir in Parmesan cheese, parsley, salt, pepper, and garlic powder. Toss with cooked pasta and serve immediately.

Oh, one last thing... the sauce seems to be kinda runny at first... so my suggestion would be to let it sit for at least 5 min as it thickens as it sits. It was at the right consistency for us about halfway through the meal...but we didn't let it sit at all!

Menu: Aug 3-8

WOW! Another menu... this is getting a little exhausing... all this organization... I almost don't know what to do with myself.

I have to admit...this weeks menu was a little more complicated than the one's before. With the daycare staring and having a menu for lunches, I now have to pick items for supper that isn't the same as the daycare menu. Who wants to eat the same this twice in one week! Boring!
